1 tablespoons extra virgin olive oil, separated

1/2 cup quinoa

1 cups warm water

1/6 cup golden raisins

1/4 teaspoon curry powder

1/2 clove finely minced garlic

1/4 cup bell pepper, cored and finely chopped

1/4 cup finely diced celery

2 minced scallions

1/2 teaspoon orange zest

1/4 teaspoon salt

Pinch black pepper

1/8 cup toasted pine nuts


Step-by-Step Instructions

  • Heat 1/2 tablespoon olive oil in a pan over medium heat. Add the quinoa and toast for about 3 minutes, stirring occasionally.

  • Add the warm water, raisins, and curry powder. Stir well, bring to a boil, then reduce to a simmer. Cover and cook for 15 minutes, or until the liquid is fully absorbed.

  • Transfer the cooked quinoa to a bowl and let it cool slightly.

  • Add the garlic, bell pepper, celery, scallions, orange zest, salt, black pepper, pine nuts, and the remaining 1/2 tablespoon olive oil.

  • Mix well until all ingredients are evenly combined.

  • Taste and adjust seasoning as needed.

  • Refrigerate for at least 30 minutes before serving to allow the flavors to blend.
