3 eggs
1 tsp olive oil
1/2 avocado, sliced
Salt and pepper to taste
Veggies of choice (asparagus, sliced deli meat, tomatoes, broccoli, onions, peppers)

How To Make Avocado Omelet
Crack the eggs into a bowl, add a pinch of salt, and whisk with a fork until smooth and slightly frothy.
Heat a 10-inch nonstick pan over medium-high heat. Add the olive oil and swirl to coat the surface evenly.
Pour the eggs into the center of the pan and stir gently with a rubber spatula for about 5 seconds.
Once the eggs begin to set, tilt the pan and move it gently so the uncooked egg flows outward.
