Ingredients

  • 3 eggs

  • 1 tsp olive oil

  • 1/2 avocado, sliced

  • Salt and pepper to taste

  • Veggies of choice (asparagus, sliced deli meat, tomatoes, broccoli, onions, peppers)

How To Make Avocado Omelet

  1. Crack the eggs into a bowl, add a pinch of salt, and whisk with a fork until smooth and slightly frothy.

  2. Heat a 10-inch nonstick pan over medium-high heat. Add the olive oil and swirl to coat the surface evenly.

  3. Pour the eggs into the center of the pan and stir gently with a rubber spatula for about 5 seconds.

  4. Once the eggs begin to set, tilt the pan and move it gently so the uncooked egg flows outward.

  5. Use the spatula to shape the omelet into a circle and loosen the edges as it cooks.

  6. Add your preferred vegetables or deli meat, if using.

  7. Let the omelet cook for about 10 seconds without touching it.

  8. Fold one side of the omelet toward the center, then slide it onto a plate and fold again to create a neat tri-fold shape.

  9. Top with sliced avocado, season with salt and pepper, and serve immediately.
